Baked Cheesecake from Homewood Artisan Cheesemakers


100g unsalted butter

200g Digestive biscuits

500g Homewood fresh Ewes' cheese

200g caster sugar

3 eggs

2 tbsp cornflour

300ml soured cream

1tsp vanilla essence or

Zest of 1 lemon


1. Melt the butter and add to the crushed biscuits.

2. Press into a 23cm springform tin and chill.

3. Combine the cheese and sugar, and add the eggs one at a time.

4. Add the corn flour and the soured cream.

5. Finally add the Vanilla essence or the lemon zest.

6. Pour the mixture over the base.

7. Bake at 150°C, 302°F or gas mark 2 for 1 hour, then cool in the oven for 1 hour.

8. Cool, chill and eat
